Ricci pasta Malta is an artisanal Sicilian dried pasta produced by Tal-Kastell Żgħir using only coarse durum wheat semolina and water. We bronze-draw the pasta and slowly dry it at a low temperature. As a result, it develops a rough surface that captures sauces beautifully while preserving its authentic wheat flavour and firm texture.

What Makes Ricci Special?

Furthermore, we produce our Ricci pasta using traditional techniques that honour the heritage of Italian pasta making. The bronze extrusion process creates a naturally rough and porous surface, allowing sauces to cling to the pasta more effectively than many industrial alternatives.

How We Make Our Artisanal Dried Pasta

At Tal-Kastell Żgħir, we make Ricci pasta with just two ingredients: premium durum wheat semolina and water. First, we carefully mix the dough. Next, we bronze-draw it to create the characteristic rough surface. Finally, we slowly dry the pasta at a low temperature.

This traditional process takes longer than modern industrial methods. However, it helps preserve the natural flavour, colour and structure of the pasta. As a result, you enjoy superior texture, excellent cooking performance and authentic taste.

Thanks to its unique shape and porous surface, Ricci pasta pairs exceptionally well with a wide range of sauces.
