Gigli (JEE-lyee or /ˈdʒiʎʎi/) pasta made in Malta is an artisanal Italian dried pasta produced by Tal-Kastell Żgħir using only coarse durum wheat semolina and water. We bronze-draw the pasta and slowly dry it at a low temperature. As a result, it develops a rough surface that captures sauces beautifully while preserving its authentic wheat flavour and firm texture.

What Makes Gigli Special?

Gigli, also known as Giglio (singular), is a traditional Italian pasta shape inspired by the elegant petals of a Lily flower. Its ruffled edges and curled form create a beautiful appearance while serving a practical purpose. The folds and ridges help capture sauces, vegetables, herbs, and small ingredients, ensuring rich flavour in every bite.

Furthermore, we produce our Gigli pasta using traditional Italian pasta-making techniques. The bronze extrusion process creates a naturally rough and porous surface, allowing sauces to cling to the pasta more effectively than many industrial alternatives.

At Tal-Kastell Żgħir, we make Gigli pasta with just two ingredients: premium durum wheat semolina and water.

First, we carefully mix the dough. Next, we bronze-draw it to create the characteristic rough surface and elegant flower-like shape. Finally, we slowly dry the pasta at a low temperature.

This traditional process takes longer than modern industrial methods. However, it helps preserve the natural flavour, colour, and structure of the pasta. As a result, you enjoy superior texture, excellent cooking performance, and authentic taste.
