Conchiglie (kon-KEEL-yee or /koŋˈkiʎʎe/) pasta made in Malta is an artisanal Italian dried pasta produced by Tal-Kastell Żgħir using only coarse durum wheat semolina and water. We bronze-draw the pasta and slowly dry it at a low temperature. As a result, it develops a rough surface that captures sauces beautifully while preserving its authentic wheat flavour and firm texture.

What Makes Conchiglie Special?

Conchiglie, which means “seashells” in Italian, is one of Italy’s most beloved pasta shapes. Its distinctive shell-like form is both attractive and highly functional. The curved cavity naturally holds sauces, vegetables, seafood, cheese, and herbs, ensuring flavourful bites from start to finish.

Furthermore, we produce our Conchiglie pasta using traditional Italian pasta-making techniques. The bronze extrusion process creates a naturally rough and porous surface, allowing sauces to cling to the pasta more effectively than many industrial alternatives.

The ridges and hollow interior work together to trap ingredients, making Conchiglie particularly enjoyable in both simple and elaborate recipes.

Traditional Italian Conchiglie Pasta

Conchiglie originated in Southern Italy and has become a staple pasta shape throughout the country. Inspired by the shells commonly found along Italy’s coastline, the shape combines practicality with visual appeal.

Today, Conchiglie is enjoyed across Italy and around the world. Its versatility makes it suitable for everyday family meals as well as special occasions. The shell shape offers a pleasant bite, while the flavour of premium durum wheat semolina complements a wide range of ingredients.

Above all, Conchiglie pasta brings authentic Italian tradition to your table and transforms simple ingredients into memorable meals.

How We Make Our Artisanal Dried Pasta

At Tal-Kastell Żgħir, we make Conchiglie pasta with just two ingredients: premium durum wheat semolina and water.

First, we carefully mix the dough. Next, we bronze-draw it to create the characteristic shell shape and rough surface. Finally, we slowly dry the pasta at a low temperature.

This traditional process takes longer than modern industrial methods. However, it helps preserve the natural flavour, colour, and structure of the pasta. As a result, you enjoy superior texture, excellent cooking performance, and authentic taste.

Best Sauces for Conchiglie Pasta

Thanks to its shell shape and porous surface, Conchiglie pasta pairs exceptionally well with a wide variety of sauces.

Recommended pairings include:

  • Fresh ricotta
  • Fresh ricotta and marjoram
  • Tomato and basil sauces
  • Seafood sauces
  • Pesto and herb-based sauces
  • Tuna and caper sauces
  • Mediterranean vegetable sauces
  • Cheese-based sauces
  • Cold pasta salads (insalata di pasta)

One of the most traditional and delicious ways to enjoy Conchiglie is with fresh ricotta, which fills the shells beautifully and creates a simple yet authentic Italian dish. For added aroma, a touch of fresh marjoram pairs exceptionally well with the delicate flavour of the ricotta.

Conchiglie is also an excellent choice for cold pasta salads. Its shell shape naturally holds dressings, vegetables, olives, cheese, tuna, and other ingredients, making it a popular pasta for summer meals, picnics, and outdoor gatherings.

Likewise, the pasta works wonderfully with tomato, seafood, and vegetable-based sauces, as the shells capture small ingredients and deliver flavour in every bite. This versatility makes Conchiglie an excellent pantry staple for both everyday meals and special occasions.
