Wholegrain Fusilli

This pasta shape is called Fusilli. We make it as a bronze‑drawn dried pasta using only two simple ingredients: coarse wholegrain durum wheat semolina (semola di grano duro) and water. We extrude the dough through bronze dies, cut it to length, and dry it slowly at a low temperature. As a result, the pasta preserves flavour, structure, and nutritional value.

Fusilli is a traditional Italian pasta shape with a tight spiral, also known as a corkscrew form. The name comes from the Italian word fuso, meaning spindle. Traditionally, pasta makers used this tool to twist fresh dough by hand.

Origin Story

A Handmade Tradition

Originally, fusilli comes from southern and central Italy, particularly Campania, Molise, and Basilicata. In the past, pasta makers wrapped fresh dough around a thin rod or knitting needle. Then, they rolled it by hand to create the classic spiral shape.

The Name

The spiral shape closely resembles yarn twisted around a fuso, a common household spinning tool. For this reason, the pasta adopted the same name.

From Handcrafted to Extruded

Over time, pasta production evolved. With the arrival of industrial pasta-making, producers began extruding fusilli instead of shaping it by hand. However, the spiral form remained unchanged. Today, bronze dies recreate the original texture while ensuring consistent results.

Structure

Wholegrain Fusilli has a solid, tightly twisted spiral with ridges. Because of this shape, it holds sauces exceptionally well and delivers flavour in every bite.

Common Names

This pasta is known by several names, including Fusilli, Fusilli Lunghi, and Fusilli Napoletani. In many regions, handmade versions are still called fusilli al ferretto.

Best Pairings

Fusilli pairs perfectly with pesto, tomato-based sauces, vegetable ragùs, and creamy dairy sauces. Moreover, it works extremely well in pasta salads. The spirals cling to dressings, herbs, and finely chopped ingredients.
