This pasta shape is called “Radiatori”. It’s a bronze‑drawn dried pasta made with just two simple ingredients: coarse durum wheat semolina (semola di grano duro) and water. Each piece is cut by hand, one by one, and dried slowly at a low temperature.
- Industrial Inspiration: The name radiatori translates to “radiators,” with the shape intended to resemble early 20th-century heating fixtures.
- Debated Origin: Some theories suggest it was designed in the 1960s, while others place its origin between the First and Second World Wars.
- The Bugatti Legend: A popular, though unverified, story claims the shape was modeled after the radiator grill of a Bugatti car.
- Regional Roots: Although industrial in design, it is strongly associated with Naples and the Campania region.
- Structure: It is short, thick, and characterized by concentric, ruffled ridges that easily trap sauces.
