Paccheri – Traditional Bronze‑Drawn Pasta from Campania
Paccheri is an artisanal Italian dried pasta produced by Tal-Kastell Żgħir using only coarse durum wheat semolina and water. We bronze-draw the pasta and slowly dry it at a low temperature. As a result, it develops a firm texture and authentic flavour that make it ideal for traditional Italian recipes.
What Makes Paccheri Special?
Paccheri is a large tubular pasta shape that originates from Southern Italy, particularly the Campania region around Naples. Its smooth exterior and generous size create an elegant presentation while providing the perfect structure for rich sauces and creative fillings.
Furthermore, the large tubes capture sauce inside as well as outside the pasta. Consequently, every bite delivers excellent flavour and a satisfying texture. Whether you prepare a simple tomato sauce or a sophisticated seafood dish, Paccheri offers impressive versatility.
Traditional Italian Paccheri Pasta
The name “Paccheri” comes from a Neapolitan word that refers to a playful slap or clap. In fact, the large pasta tubes often create a distinctive sound while cooking and mixing with sauces. Today, Paccheri remains one of the most recognisable pasta shapes in Southern Italian cuisine.
Traditionally, Italian cooks pair Paccheri with seafood, slow-cooked ragù, fresh vegetables and rich tomato sauces. In addition, many chefs use the large tubes for stuffed pasta recipes because they provide ample space for fillings.
How We Make Our Artisanal Dried Pasta
At Tal-Kastell Żgħir, we make Paccheri using just two ingredients: premium durum wheat semolina and water. First, we carefully prepare the dough. Next, we extrude it through bronze dies to create a rough surface that helps sauces cling to the pasta. Finally, we slowly dry the pasta at a low temperature.
This traditional process takes longer than industrial production methods. However, it preserves the natural qualities of the semolina and creates a superior eating experience. As a result, the pasta maintains its structure during cooking and delivers excellent flavour.
Best Sauces for Paccheri
Thanks to its large tubular shape, Paccheri pairs exceptionally well with hearty and flavourful sauces.
Recommended pairings include:
- Classic tomato and basil sauces
- Slow-cooked beef or pork ragù
- Seafood sauces with prawns, mussels or calamari
- Roasted vegetable sauces
- Aubergine-based Sicilian dishes
- Ricotta and spinach fillings for baked pasta recipes
For example, Paccheri works wonderfully with seafood because the large tubes capture small pieces of fish and shellfish. Likewise, it complements rich meat sauces by providing the perfect balance between texture and flavour.
Authentic Durum Wheat Semolina Pasta
We use high-quality durum wheat semolina because it provides the strength and elasticity required for premium pasta. Moreover, durum wheat contributes to the characteristic golden colour and pleasant bite that pasta lovers appreciate.
